Colorado
Sometime in the early 1880s Charles "Frenchy" Vosbaugh, who had already been living his life as a man for several decades arrived in the small Rocky Mountain outpost of Trinidad, Colorado with his wife and his wife's young child. The couple opened a french restaurant in town (by several reports one of the best restaurants in the West).
(Note: we use the term "transgender" to refer to Vosbaugh. While it may be an anachronism in this context, it feels like the right terminology).
